University of Washington Student Opens New Healthy Restaurant reports Washington Eats

(I-TravelNewswire.Com, November 16, 2012 ) District of Columbia -- A Washington University senior has defied the economic instability and become a symbol of what the United States is; the land of opportunity.



Sarah Haselkorn, a 20-year-old engineering student at the University of Washington, is the owner and manager of a local restaurant called “Green Bean,” which she herself created the business plan for.



Green Bean is a healthy alternative fast food restaurant that offers a variety of salads, wraps, and other healthy choices and is just the latest addition to America’s health craze when it comes to fast food. The restaurant is known for its “going green” ways as it uses recycled materials for everything, and makes sure to recycle them after they have been used.



Haselkorn collaborated on the business plan for the restaurant with hometown friend Nick Guzman, an Amherst College student in Massachusetts. After months of planning, the two entrepreneurs took their idea to the New York Stock Exchange where they gave a presentation to potential investors. The idea was a hit and Haselkorn and Guzman were in business.



Haselkorn says while the idea was modeled after many existing chains around the country, she wanted to take the “going green” aspect to another level.



“We wanted to have real, whole food and transparent nutrition,” Haselkorn says. “But we also wanted to focus on sustainability. We wanted to be better, different. We wanted it to be Green Bean,” she said.



The menu for Green Bean was put together by a father of one of Guzman’s friends, who just happens to be James Beard, a highly successful chef. The restaurant currently has eight employees, but Haselkorn and Guzman do a lot of the daily work that needs to be done to run a successful business. Haselkorn admits that the two owners do not do everything saying, “we have a tax accountant.”



When asked if Green Bean was to be the start of a national chain, Haselkorn told us that it could be a possibility in the future, but that they want to make the original “perfect” before even thinking about expansion.



Green Bean has been put in the category of a “fast casual” restaurant, which made up nearly 7% of all restaurant business last year, and is growing in popularity at a rapid rate.



For her efforts and ideas, Haselkorn was selected as a finalist for the Entrepreneurs’ Organization Global Student Entrepreneur Awards, which will hold a ceremony in New York City and recognizes students from over forty countries.



Haselkorn said while it is not about the prizes, she is honored to have been selected as part of such a prestigious group.
